Overview

The webinar introduces food security challenges, pre-colonial Tagalog cuisine of Manila, and innovations during colonial times that resulted when Filipino, Chinese, Southeast-Asian, Spanish, Hispano-American, and North American ingredients and cooking techniques blended. No food was produced within the original colonial Manila protected by Fort Santiago, stone walls, and a buffer of water. The capital of Spain in Asia expanded into suburbs that were developed as resources for kitchen gardens, ranches, artisanal products, and potable water. Favorite Filipino foods including sinigang, tinola, suman, and inihaw link contemporary Manila’s menus into and beyond colonial times.
