Isobel Carse completed years of training in chocolate making with a luxury British chocolatier, before setting up Dormouse Chocolates over 5 years ago. She has won several Academy of Chocolate awards including UK Rising Star in 2017; and a gold and silver award for two bars with Kablon Farms cacao in 2018. She received a further 3 International Chocolate Awards in 2019 for bars with Kablon Farms cacao. Today she has a small shop in Manchester where people can experience chocolate being made.

About the Intramuros Learning Sessions
The Intramuros Learning Sessions (ILS) is the educational webinar series of the Intramuros Administration (IA). The IA is an attached national government agency under the Department of Tourism.
Topics are interdisciplinary and cover themes related to Intramuros and Manila studies, Philippine studies, as well as cultural heritage studies. Pursuant to IA’s charter, the ILS aims to contribute to the strengthening of the Filipino’s national identity and sense of belonging and pride.
