About the Speakers

Patrick Belisario is a registered Professional Agricultural Engineer since 1995. He has a BS in Agricultural Engineering from Xavier University – Ateneo de Cagayan and a Master in Development Management from the Asian Institute of Management.

Patrick has extensive experience in NGO developing & implementing rural agri-enterprises, financing sustainable agri-enterprises. Among others, he also organized the Organic Certification Center of the Philippines, Virgin Coconut Oil Philippines.

He has 15 years experience as independent consultant, researcher & writer, international organic & fair trade inspector, organic grower group certification, geographical indication technical expert, industry development, micro entrepreneur – bean to bar chocolate manufacturer, among others.

Isobel Carse completed years of training in chocolate making with a luxury British chocolatier, before setting up Dormouse Chocolates over 5 years ago. She has won several Academy of Chocolate awards including UK Rising Star in 2017; and a gold and silver award for two bars with Kablon Farms cacao in 2018. She received a further 3 International Chocolate Awards in 2019 for bars with Kablon Farms cacao. Today she has a small shop in Manchester where people can experience chocolate being made.

Mathieu Dierinck wears many hats: consultant, teacher, chocolatier, pastry chef, and dessert lover. Born in Belgium but now based in Germany, he has worked with famous chefs and establishments like 3-Michelin-starred Waterside Inn (Maidenhead/UK); for Gordon Ramsay (UK) as Pastry Chef; Sans Cravate (Bruges/Belgium); La maison Oberweis (Luxembourg); Barry Callebaut Chocolate Academy (Belgium, Netherlands, Luxembourg). He now has a bean-to-bar brand, Artist Chocolate (Germany) which received from International Chocolate Awards (2020) a silver prize for two Kablon Farms origin bars.

Estela Duque is an architect, historian, social entrepreneur, certified chocolate taster, and chocolate competition judge in Europe.

In 2015 she founded Moulinet Chocolat Limited (UK) in order to introduce Philippine specialty cocoa to the world. She started in 2017 the only craft chocolate event of the Philippines, now called Intramuros Chocolate Festival. Geographic Indications for cacao in the Philippines is one of the channels for her advocacy in heritage conservation.

Ernesto Pantua is the owner and General Manager of Kablon Farms. Ernesto’s farm is a family-owned and is located in Tupi, South Cotabato. The farm combines sustainable methods of farming and fair trade.

Peter Schoenaker is a professional musician, who about four years ago decided to immerse himself in the chocolate world by developing his knowledge of the subject. He started ChocoladebloG (Dutch) and Peterschocolade (English) at Instagram, in order to educate the public about his trips to chocolate festivals all over Europe and visit to makers, traders, and all kind of chocolate experts. His chocolate tasting average for the past 4 years is about five different bars per week.

Prof. Dr. Fernando Nakpil-Zialcita has a M.A. in Philosophy from the Ateneo de Manila University, and a M.A. and Ph.D. in Anthropology from the University of Hawaii. •

He is presently a Professor Emeritus at the Ateneo de Manila University, and head of the university’s Cultural Heritage Program.

Though from Manila, much of his field research took place among farming communites in the Ilocos, Northern Luzon. Lately, however, he has shifted his focus to street research because of his interest in urban heritage and regeneration. Some of his books are: Philippine Ancestral HousesAuthentic Though not Exotic: Essays on Filipino Identity, and Quiapo Heart of Manila.


About the Host: Rancho Arcilla

John Paul Escandor Arcilla, known professionally as Rancho Arcilla, is the author of the Intramuros Register of Styles (2021). He is currently the Chairperson of the Intramuros Technical Committee on Architectural Standards (TCAS). As TCAS Chairperson, Arcilla oversees the review of all development, including new constructions, in the Walled City. He is also a PhD student at the Tri-College of the University of the Philippines (UP) Diliman. He has an MA in Philippine Studies from UP Diliman and a BA in Asian Studies from the University of Santo Tomas.

Arcilla specializes on colonial architecture. The architectural provisions of the Revised 2021 Implementing Rules and Regulations of Presidential Decree No. 1616, the main framework and legal instrument in the management of Intramuros District, is based on his MA thesis Walls within Walls the Architecture of Intramuros (2021).


About the Intramuros Learning Sessions

The Intramuros Learning Sessions (ILS) is the educational webinar series of the Intramuros Administration (IA). The IA is an attached national government agency under the Department of Tourism. 

Topics are interdisciplinary and cover themes related to Intramuros and Manila studies, Philippine studies, as well as cultural heritage studies. Pursuant to IA’s charter, the ILS aims to contribute to the strengthening of the Filipino’s national identity and sense of belonging and pride.
